There has been interesting talk in the shoutbox about holidays. Years ago we once took Monty and Mitzi with us on holiday. We went to a holiday cottage, and it had been difficult to find somewhere that would allow us to have them so we were pleased to have found somewhere that did. (In the literature it said one small dog was allowed so we had to get special permission to have the parrots, and when we arrived the owner turned up with a sheet to put on the floor, until she saw we were already well prepared!)
Monty has always been very different to Mitzi - he has never been afraid of anything new, he plays with all sorts of toys, he tries any food and he has never been a one person bird. When travelling in the car he would just sit on the perch whereas Mitzi would hang upside down on the bars the whole time.
We were therefore very surprised when it was Monty who was upset, he refused to eat and I had to hand feed him.

That's interesting. I suppose us humans have a knack for wanting to categorize things, so for us "change", or the ability to handle or not handle change, is something of a binary that we may attach to a person to describe an aspect of their personality. But parsing out the items you mention (toys, food, travel, new surroundings) the specifics really don't have much to do with each other, so perhaps the generalizations need to be considered cautiously when trying to predict behavior when new experiences are encountered.

They also change personality with age. Chy used to be afraid of everything. Now she jumps on a new toy as soon as it is put in her cage. She doesn't wait for me to hang it. I have to move her away so I can fasten the toy. She also talks up a storm when traveling in the car.
