They do vary, some start at a few months, some not until 2 years old. I have two aged 22 and 20. The 22 year old has never talked, the 20 year old started at 5 months.

My guy didn't start talking until he was over a year old.

My Joey makes lots of sounds but the only word he can say is Hello. He said Hello just before he turned 12 months.

When I first researched getting a grey, the information I saw said they usually start between 1 and 2 years old.
My first grey said, "hello" at 6 months then didn't say anything else until 8 months when he became a super talker.
My current grey, started talking in sentences when she was 5 months old. She is a chatterbox who thinks she is a person rather than a bird!

I would say that it varies with each African Grey Parrot. My advice is that you might want to teach them simple words early so it helps them grasp the vocalization. I hope that my advice helps.
