I saw on TV Nigella Lawson poaching an egg. She used a method I haven't seen before. She put the egg into a small sieve so that the watery part of the white drained out. (This is the part that usually makes a frothy mess during the poaching process.) She then put the rest of the egg into a cup and added about a teaspoon of lemon juice to tighten up the white. Finally she slid the egg into the pan of water, with the water barely moving. Her egg turned out a perfect oval.

I use the lazy way and just put the egg in an egg poacher within the water.
By the way, Chy loves eggs regardless of how they are cooked.

I usually do too, I use the silicone poaching pods which float in the water. I did try the Nigella method and it worked quite well but not as good as hers. I reckon hers had been trimmed, it was just too perfect!
