Not all Greys enjoy being sprayed or having baths but a dry atmosphere can cause dry itchy skin and poor feather condition so it is a good idea to get them started while young. Once your bird is fully feathered introduce the idea very carefully using a small sprayer (the sort used for airplants are good) and warm water. Spray lightly to start with so that the spray falls like gentle rain. If your bird tries to bath in the water bowl that is also a good time to introduce the sprayer. Do not spray the bird too close to bedtime as it will need to dry out before it goes to sleep and make sure there are no drafts. Aloe Vera can be added to the water, especially during molting as it helps to soothe and soften the irritated skin and newly emerging feathers. Specialised feather sprays are also available, some of which contain aloe vera. Some birds enjoy going in the shower with their owners. You can also try using a wide bowl with shallow water in and sprinkle water over the feathers. This is often more easily enjoyed by a young bird though and adults may be less likely to accept it. Put toys in the water to encourage the bird to explore. If you really cannot get your Grey to have a shower or bath don't force the issue but keep the humidity up with bowls of water, or in the winter, use containers on the radiators or equivalent. If you use a humidifier these need to be kept scrupulously clean to avoid the growth of bacteria and fungi.
