at times jack's poo is regular and at times looks like brown water. He's eating well and drinking well. Is this normal??

It can vary depending on what has been eaten, especially if he has had a lot of fruit. The coloured part, usually brown or dark green, should be solid and well formed. If this part is runny then it is diarrhoea. There is also a white part and a watery part but the droppings don't necessarily have all three.

Is this how it has been since you got him? The important thing to do is observe the droppings so that you get to know what is a normal range for him.

No not since we got him. Maybe it because we are feeding more of a variety of food than his previous owner.

Thanks Jane. I was hoping that is what it was. He wants to eat everything I eat, as well as wanting everything I drink. But the drink he doesn't get any of.

Yeah! Jim Beam & Coke is rough on the lil' buddy. Just kidding You know what's going in, so you should expect the same water content to arrive later. I find the leavings a good indicator of what Pete needs, but observation of habits and behaviour a better sign to ill health, in my opinion.
