They can have a huge variety of fruit and vegetables but the emphasis should be on vegetables. There are only really a few things they can't have; it is a much shorter list!
Obviously, don't give avocado pear, also don't give raw potato, and don't give mushrooms and onions. Avoid iceberg lettuce as it has very little nutrition and can cause diarrhoea. Spinach contains calcium but is high in oxalates which inhibit calcium absorption so don't give too much. Remove stones from apricots, peaches, plums, apples etc. Don't give raw lima, soy, navy or kidney beans but they are okay cooked.

I just gave them to Jack last night uncooked right out of the fridge. Once he figured out that is what i was eating he was loving them. He will not eat anything unless I am eating it as well. Not sure how to change this since some of the things that are good for him I don't care for.

They are quite high in water, they can be served raw or cooked but only need light cooking otherwise they go mushy. It is often better to serve vegetables lightly cooked because it makes them more digestable.
